Dr. Cyprian Odoli is a Principal Research Scientist and Station Manager at the Kenya Marine and Fisheries Research Institute (KMFRI) Baringo Station. He has over 17 years of research experience in diverse areas of food safety and quality assurance systems, but predominantly in quality management of fish handling and processing. Dr. Odoli holds a PhD in Food Science from the University of Iceland, with a thesis on drying and smoking of capelin (Mallotus villosus) and sardine (Sardinella gibbosa) – examining the influence on physicochemical properties and consumers' acceptance. He also holds an MSc in Food Science from the University of Iceland, Iceland, and a BSc in Fisheries from Moi University, Kenya. Additionally, he has attained two international diplomas: one in Food Safety, Quality Assurance Systems and Risk Analysis (Gent University, Belgium) and another in Quality Management of Fish Handling and Processing (United Nations University). He is also trained as a strategic leader and senior manager through the Senior Management Course at the Kenya School of Government. Dr. Odoli has been involved in several projects including: Small Fish and Food Security – Towards innovative integration of fish in African food systems to improve nutrition (funded by LEAP-AGRI, ongoing); Securefish projects (funded by the European Union); Quality assessment of artisanal fish landing (funded by WIOMSA); Selected temperate fish shelf life studies (funded by UNU-FTP); and Community involvement in production and marketing of value added fish products for improved livelihood (funded by the Lighthouse Foundation). Professional Memberships International Institute of Fisheries Economics and Trade (IIFET) Western Indian Ocean Marine Science Association (WIOMSA) Key Research Contributions & Publications Post-Harvest Interventions – Lead author on research examining whether post-harvest interventions in small-scale fisheries are a boon or bane to food and nutritional security in Kenya (Food Security 2019). Fish Processing & Quality – Research on the influence of lipid content and pretreatment methods on protein conformation in capelin during smoking and drying (Food Science & Nutrition 2019); influence of blanching and drying methods on quality changes of dried sardine during storage (Drying Technology 2017); influence of smoking and packaging methods on lipid stability and microbial quality of capelin and sardine (Food Science & Nutrition 2015).
